High altitudes, rain forest, spring water and varietals of Catuai, Yellow Catuai, Pacamara and Caturra, the farm structure is ideal for producing great quality coffee. The Finca Escenica, SA staff on the Santa Pancha farm is meticulously trained and processes in place to take the very best care of the land and the coffee plants. Coffee cherries are handpicked at the peak of
ripeness and immediately taken to the pulper and washed in the fermentation tanks on the Santa Pancha grounds. Once washed the coffee is taken down to the Esteli valley to be dried and milled. This ensures the highest quality is maintained from the seed to the packaging and export.
